Kiwi, Rocket & Goat Cheese Salad

Ingredients

2 kiwis, thinly sliced
2 cups of arugula, cut into slices, cut into thin slices
50 g goat’s cheese, grated
1/4 cup walnuts, roasted
1/4 cup pomegranate (optional)
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt & pepper

Execution

  1. In a large bowl, combine arugula, kiwi, goat cheese and walnuts.
  2. In a small bowl, whisk together the olive oil, vinegar, salt and pepper.
  3. Pour the dressing over the salad and toss gently.
