Tarte with Vanilla & Kiwi Cream

Ingredients

For the base:
200 g digestive biscuits, crushed
100 g butter, melted

For the cream:
500 ml milk
2 egg yolks
100 g sugar
50 g cornflour
1 teaspoon of vanilla extract

For decoration:
3 kiwis, thinly sliced

Notes

A sophisticated dessert with velvety cream and fresh fruit.

Execution

  1. Mix the grated biscuits with the melted butter and press the mixture into a cake tin. Place the base in the refrigerator for 30 minutes.
  2. In a saucepan, heat the milk. In a bowl, whisk together the egg yolks, sugar and cornstarch. Add some of the hot milk and mix well.
  3. Return the mixture to the saucepan and cook over low heat until thick. Add the vanilla.
  4. Allow the cream to cool and spread it over the base.
  5. Decorate with kiwi slices and refrigerate the tart for 2 hours before serving.
